Sophia’s Oat “Cheese”

Ingredients

1 cup oats

3 cups chicken or pork stock

3 tablespoons starch (potato or tapioca)

1 teaspoon salt

1 teaspoon lemon juice

1/4 teaspoon turmeric

4 tablespoons olive oil

2 tablespoons garlic powder

Directions

Soak the cup of oats in 2 cups of stock for 15-30 minutes.

Put in the blender and add the additional cup of stock. Blend well until it is a thick and smooth mixture.

Strain and discard the clumps. Add the strained liquid back into the blender. Add the starch, salt, lemon juice, turmeric, olive oil, and garlic powder.

Put the mixture in a pan over medium high heat and stir until mixture thickens. Be sure to stir so it does not burn. Once the mixture is thickened, add to a lightly oiled glass container to cool and set in shape. Smooth out the top and ensure it is packed as evenly as possible.
