Ingredients
1 cup peeled & diced yukon gold potato
½ cup peeled & diced carrots
1 ¼ cups chicken broth
3 tbsp extra light tasting olive oil
1 tsp sea salt
¼ cup low histamine salsa*
*(or deconstructed elements totaling up to ¼ cup – roasted bell pepper, green onion, garlic, cilantro, juice of 1 lime, salt, black pepper)
2 tsp tapioca starch
Directions
Add potatoes, carrots, broth, oil, sea salt, and salsa to the instant pot.
Put on the lid and close the valve to seal. Cook on high for 15 min. When it’s done cooking, turn the valve to open and do a quick release of the pressure.
Add the tapioca starch and blend the mixture until it’s completely pureed.
Pour the puree back into the instant pot and simmer for 2-3 min, whisking occasionally until it is the thickness you want.
