Roasted Turnip Beef Gravy

Ingredients

  • 2 cups of beef broth
  • 4 Tablespoons Butter
  • 1 small turnip, peeled
  • 1 tsp kosher salt
  • 2 small cloves of garlic

Instructions

Chop the turnips in half lengthwise, then chop into 1/4″ thick half rounds

Mince/press the garlic

Heat a pan over medium heat, add the butter and once melted, add the turnips. Roast the turnips in the butter until lightly toasted and tender. Add the garlic and cook until the garlic starts to brown. Add the salt and broth and simmer until slightly reduced. Once the turnips are very tender, blend them with some of the liquid until a thick puree forms. Add the puree to the simmering liquid and stir well to incorporate. Simmer and reduce the gravy until the desired texture is reached.
