Ingredients
- 1 cup of Olive Oil potato chips, processed to the texture of breadcrumbs with a food processor
- 1 lb 85% lean ground beef
- 1 tsp kosher salt
- 2 cloves of garlic, pressed
- 1 green onion stalk sliced thinly
- 1/3 cup of beef stock
Instructions
Pre-heat the oven to 425 degrees.
Add all ingredients except salt and meat to a bowl. Stir and let sit for 5 minutes so the potato chips absorb some liquid. Add the meat to the bowl. Add the salt to the meat. Knead the mixture together until everything is well distributed.
Roll into 12 equal, golf ball sized balls.
Bake for 12 minutes at 425 or until 160 degrees in the middle when tested. Let rest 5 minutes to carryover cook until 165 and serve with roasted vegetables and gravy.
