Ingredients
Chicken
- 3-4 lbs boneless skinless chicken thighs (could also used steak)
- 2 tsp cumin
- 5 cloves of garlic, minced
- 2 tbsp ginger, grated (about 1 inch piece)
- 1/4 cup coconut aminos
- 2 tbsp unsweetened rice vinegar
- 1 tbsp avocado oil
Veggies
- 2 bell peppers
- 1 large or 2 small red onions
- 8 oz mushrooms
Garlic Rice
- 2 cups White or black rice
- 2 cloves garlic, minced
Additional
- French fries, Trader Joe’s tater tots, or some kind of hot crispy potato
- cilantro and green onion for garnish
- Mango sauce
- An additional bit of stir fry sauce: 2 parts coconut aminos, 1 part rice vinegar
Instructions
Chicken
Combine all ingredients and marinate 4-8 hours. Cook on medium high heat until 165 degrees.
Veggies
Chop bell pepper and onion into large squares and the mushrooms in half. Sauté over medium high heat until tender and a bit roasted and carmelized.
Garlic Rice
Cook rice as usual and add in minced garlic cloves while cooking.
