Sophia’s Chili


Ingredients

Seasoning

  • 2 tsp salt
  • 1 tsp oregano
  • 1/4 tsp cinnamon
  • 1/2 tsp cumin
  • 1/4 tsp cayenne
  • 1/2 tsp thyme
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder

Components

  • 1 lb carrots, diced into 1/4 inch cubes
  • 2-3 parsnips, diced into 1/4 inch cubes
  • 2 rutabaga, diced into 1/4 inch cubes
  • 1.5 cups beef or chicken broth
  • 1 roasted bell pepper
  • 1 lb ground beef
  • 1/2 lb black beans
  • 4 garlic cloves
  • 1 onion, diced

Garnishes

  • Cilantro
  • Lime juice
  • Diced bell pepper pieces
  • Cabbage

Instructions

  1. Cook ground beef in instant pot until mostly browned. Add diced onions and garlic and cook until onion is tender, around 3-5 minutes.
  2. Add seasoning mix to beef mix and stir well.
  3. Add everything left (stock, veggies, and beans) and cook on high pressure for 25 minutes. Let pressure release for 5-10 minutes before releasing the rest of the steam and serve with garnishes.
