Sophia’s Focaccia Bread/Crackers

Ingredients

Bread batter

  • 2 cups Sophia’s gluten free 1 for 1 mix
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1 cup sparkling water
  • 1 tablespoons coconut sugar
  • 2 tablespoons olive oil for the pan

Directions

  1. Preheat oven 425 degrees.
  2. Whisk together flour blend, baking powder and salt in large mixing bowl. Add sparkling water, and coconut sugar. Mix until just blended.
  3. Add a glug (2tbsp) of olive oil to a baking sheet and pour batter into center of baking sheet on top of oil. Spread or tilt pan until batter is even.
  4. Bake bread 20-22 minutes or until golden brown, rotating pan after 10 minutes of baking.
  5. Allow to cool 10 minutes before serving. Slice warm focaccia bread. Best served served warm, right after baking.
