Sophia’s Breakfast Sausage

Ingredients

2.5 lbs ground pork

1 tablespoon freeze dried sage

1/2 tablespoon dried thyme

1 small bulb of fennel

1/4 tsp cinnamon

1 tsp kosher salt

10 cranks of black pepper

1 tablespoon coconut sugar

Directions

Chop fennel finely using a food processor. Combine all ingredients and mix well. Flatten into patties.

Cook until 165 degrees in the middle. Bake at 375 for 10 minutes, flip, cook another 8 minutes or pan fry.
