Ingredients
- 2 cups old fashioned oats
- 1/3 cup packed coconut sugar
- 1/2 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups coconut milk (1 box of Aroy D plus half cup of water works)
- 1/2 cup unsweetened applesauce
- 2 tablespoons unsalted butter, melted and slightly cooled
- 1 flax egg
- 1 tbsp golden flaxmeal
- 3 tbsp water
- 1 teaspoon vanilla powder
Directions
- Preheat oven to 350 degrees F. Grease an 8×8-inch baking dish with butter and set aside.
- In a large bowl, combine the oats, coconut sugar, cinnamon, baking powder, and salt.
- In a medium bowl, combine the milk, applesauce, melted butter, flax egg, and vanilla powder.
- Add the milk mixture to oat mixture; stir well. Pour the oatmeal mixture into prepared pan and bake for 30 to 35 minutes or until oatmeal is set and golden brown.
