Sophia’s Baked Oatmeal

Ingredients

  • 2 cups old fashioned oats
  • 1/3 cup packed coconut sugar
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups coconut milk (1 box of Aroy D plus half cup of water works)
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1 flax egg
    • 1 tbsp golden flaxmeal
    • 3 tbsp water
  • 1 teaspoon vanilla powder

Directions

  • Preheat oven to 350 degrees F. Grease an 8×8-inch baking dish with butter and set aside.
  • In a large bowl, combine the oats, coconut sugar, cinnamon, baking powder, and salt.
  • In a medium bowl, combine the milk, applesauce, melted butter, flax egg, and vanilla powder.
  • Add the milk mixture to oat mixture; stir well. Pour the oatmeal mixture into prepared pan and bake for 30 to 35 minutes or until oatmeal is set and golden brown.
