Sophia’s Apple Oat Cake

Ingredients

3 cups rolled oats

2/3 cup coconut sugar

1 tsp baking powder

1/4 tsp salt

1 tsp cinnamon

1/2 tsp vanilla powder

6 large golden delicious apples

1/2 cup butter (cold, to be grated onto the top)

2 tbsp coconut sugar

Directions

1 Turn on the oven to 350 F. Put the 1/2 cup butter in the freezer.

2 In a food processor, grind rolled oats about 1 minute. We need coarse oatmeal, not flour.

3 Combine grounded oats, sugar, cinnamon, vanilla, baking powder, salt. Mix it up well.

4 Prepare apples: Peel the apples and grate them on a coarse grater.

5 Assemble the cake: Crumple then lay the parchment on the bottom of an 8×8 cake pan, try to flatten out the corners as much as possible. Alternating layers, assemble the cake: start with the dry part, about 4 tbsp, cover the bottom. Then 1/3 batch of apples, 1/3 batch of dry mixture, 1/3 apples, 1/3 dry mixture, 1/3 apples, 1/3 dry mixture. Finish the assembly with the dry part.

6 Grate cold butter on the top and sprinkle with 2 tbsp coconut sugar evenly

7 Bake in the oven, preheated to 350, 55-60 minutes. Let cool to room temperature and enjoy
