Sophia’s Breakfast Casserole

Ingredients

3 Bell peppers (One orange, one yellow, one red for fun)

3 bags of baby steamer yukon gold potatoes

1 1/4 lb natural ground pork

1 bunch of green onions

2 tbsp butter

1 golden delicious apple, peeled and cut into small cubes

1 tsp freeze dried garlic

2 tsp freeze dried sage

1 tsp kosher salt

1 tsp ground black pepper

Directions

Clean and remove any nasty bits from baby potatoes. Steam the baby potatoes in the instant pot for 5 minutes until very tender. Set aside to cool.

Peel a golden delicious apple and cut into small cubes. Mix into the ground pork along with garlic, sage, salt, and black pepper until thoroughly combined.

Cook pork mixture over medium high heat until just cooked or close (8-10 minutes, stirring occasionally for even cooking). Move mixture to a bowl to sit.

Dice the bell peppers and green onions into even sized squares. Cook in the residual fat plus 2 tbsp of butter until lightly caramelized and peppers are tender. Sprinkle with a little bit of salt.

Butter a 9×13 inch baking pan thoroughly, including the sides. Put the potatoes down in an even layer. Put the sausage mixture down and spread until even. Top with bell pepper and green onion mixture evenly.

Bake at 400 degrees for 30-40 minutes until hot through and sausage is lightly browned.
