Sophia’s Quick Burger Buns or Pizza Crust


Based on: Sophia’s Focaccia Crackers

Base

Bread batter

  • 2 cups of GF Flour mix (below yields about 4 cups of volume)
    • 2 cups oat flour
    • 1 cup quinoa flour
    • 1 cup tapioca flour (starch)
    • 1 cup potato starch
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1 cup sparkling water

Burger Buns

  • 2 tbsp avocado or olive oil
  • 8 drops of monkfruit sweetener
  • 1 tsp onion powder
  • Sesame seeds

Make batter and pour in to a parchment lined (up the sides) quarter baking sheet. Sprinkle sesame seeds on top. Bake at 425 degrees for about 22 minutes. Let rest for at least 5 minutes, ideally 10 before slicing into squares for buns.

Pizza Crust

  • 2 tbsp olive oil
  • 6 drops monkfruit sweetener
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp oregano

Make batter and add additional ingredients above. Pour in to a parchment lined (up the sides) quarter baking sheet. Bake at 425 degrees for about 22 minutes. Let rest for at least 5 minutes, ideally 10 before slicing into squares for buns.
