Ingredients
2lbs boneless skinless chicken thighs
4tbsp avocado oil
Juice from 1 lemon
4 garlic cloves
1 tsp ginger (optional)
1 tsp cumin
1 tsp paprika
1 tbsp kosher salt (1.5 tsp regular)
half head of chopped fresh cilantro or parsley
Instructions
Combine marinade ingredients and combine well in a ziploc or bowl. Add chicken and mix until chicken is well coated. Marinate for 4-24 hours. Let chicken rest on counter for 30 minutes before cooking if possible. Preheat oven to 425 degrees. Sear chicken on both sides for 4 minutes over medium high heat and put in baking dish. Bake for 10 additional minutes until thighs are at least 165 in the thickest part. Let rest 5-10 minutes before cutting chicken.
