Soup base
3 cups chicken stock
3 Carrots
1/2 head Broccoli
Blend in mix
1/8 tsp cayenne
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1.5 tsp kosher salt
1/4 tsp Black pepper
1/2 head cilantro
2 limes juice
Simmering additions
Diced Bell pepper cubes
Diced Onion cubes
Final Elements
Black beans (optional)
Chicken, beef, carnitas, or other meat
Instructions
Add soup base ingredients to instant pot and cook under high pressure for 8 minutes. Release pressure when complete. Add in blend in mix and use immersion blender to make a well blended base.
Once well blended and smooth, add in simmering additions and simmer for 10 minutes until onions and peppers are tender.
Add final elements to a bowl and top with hot soup.
