Sophia’s Sweet Potato Dip with Broccoli Salsa Verde

Sweet Potato Dip

3-4 Sweet potatoes
1 tbsp Avocado oil
1 Shallot

1/4 cup water
2 tbsp olive oil
1 tsp cumin
1/4 tsp cayenne
1 roasted bell pepper
1/2 tsp onion powder
1/2 tsp kosher salt, more to taste
Juice of 1/2 lemon

Cut into small cubes, sauté and cook until softened.
Let cool to room temperature covered.
Blend all ingredients together until smooth.

Salsa

1lb Broccoli
1 head parsley
1 head cilantro
1/8 cup freeze dried dill
2 cloves garlic
Zest of 1 small lemon
Juice of 1 small lemon
Salt
Olive oil

Chop broccoli (including stems) finely. Chop herbs (including stems) finely. Toss everything together in a bowl and stir until well combined.
