Ingredients
39g (1/4 cup) oat flour
34g (1/4 cup) quinoa flour
38g (1/4 cup) cassava flour
44g (1/4 cup) potato starch
62g (1/2 cup) tapioca starch
32g (4 tbsp) Flaxseed
2g (3/4 tsp) kosher Salt
2g (1/2 tsp) baking powder
181g (3/4 cup + 2 tbsp) hot water
23g (2 tbsp) avocado oil
Directions
Combine dry ingredients and mix well.
Add water and oil and stir until dough comes together. Knead by hand until smooth and a little glossy. Cover and let rest for 10 minutes to absorb liquid. Divide into balls and roll into 4 large (10-12”) tortillas or 8 small (6-7”) tortillas. Cook on a hot griddle or pan for ~45-60 seconds per side until lightly golden brown spots appear and tortillas look cooked through.
