Ingredients
- 2 cups coconut sugar
- 2 eggs
- 1/2 cup butter
- 1/2 cup applesauce
- 1/2 tsp vanilla powder
- 1 1/2 cup oat flour
- 1 cup tapioca flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup coconut shreds
- 1 cup quinoa crispies
- 1 cup whole rolled oats
Directions
- Preheat oven to 350F.
- In a large bowl, beat together butter, sugar, brown sugar, applesauce and vanilla powder. Mix oat flour and tapioca flour together well until fully combined. Stir in remaining ingredients.
- Add rounded tablespoonfuls of dough to a cookie sheet. Press into rounds with hands or a fork as they will not spread out. Bake for 16 minutes. Let sit 3 minutes and then remove to a cooling rack.
