Sophia’s Quinoa Crispy Cookies

Ingredients

  • 2 cups coconut sugar
  • 2 eggs
  • 1/2 cup butter
  • 1/2 cup applesauce
  • 1/2 tsp vanilla powder
  • 1 1/2 cup oat flour
  • 1 cup tapioca flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup coconut shreds
  • 1 cup quinoa crispies
  • 1 cup whole rolled oats

Directions

  1. Preheat oven to 350F.
  2. In a large bowl, beat together butter, sugar, brown sugar, applesauce and vanilla powder. Mix oat flour and tapioca flour together well until fully combined. Stir in remaining ingredients.
  3. Add rounded tablespoonfuls of dough to a cookie sheet. Press into rounds with hands or a fork as they will not spread out. Bake for 16 minutes. Let sit 3 minutes and then remove to a cooling rack.
