Sophia’s Ham (Pork Loin)


Directions

Brine pork loin in a solution of 1 tbsp kosher salt to 1 cup of water until meat is fully covered. Brine 4-8 hours. Dry meat and pat a dry rub onto the exterior. Coat with oil.

Bake at 425 degrees for the first 15 minutes, then reduce heat to 375 degrees. Cook until center is 140 degrees, then let rest for 15 minutes before slicing thin across the grain.
