Ingredients
Chicken
1.5-2lb Boneless skinless Chicken Thighs (1 pack of the Costco 3 pack or about 3-4 medium chicken thighs)
2 limes cut into 6 wedges each
2 tsp freeze dried garlic (2 cloves fresh)
1 tsp freeze dried ginger (1 inch fresh)
1 big stalk of lemongrass, cut into rounds like a green onion
1 medium shallot, diced
2 stalks of green onions, cut into rounds
1/2 tbsp kosher salt
6 cranks of black pepper
2 tbsp coconut sugar
1 light handful cilantro (1/4 cup, roughly chopped)
1/4 cup olive oil
Optional: 1 inch chunks of 1 red, orange, or yellow bell pepper
Slaw
1/2 bag of shredded cabbage
1/4 cup rough chopped cilantro
1 green onion stalk cut into rounds
2 carrots shredded
2 persian cucumbers, peeled and cut into half rounds
Juice of 1 lime
2 tsp kosher salt or more to taste
Directions
Marinade Chicken
Mix chicken marinade ingredients together and stir well to combine
Cut chicken into 1 inch cubes and marinade for 4-8 hours, optionally adding bell peppers to skewer when cooking.
Air fry at 450 for 18 minutes on skewers or until 165 internal temp. Let rest for 10 minutes.
Slaw
Combine ingredients in a large bowl, salt, and toss well until evenly distributed.
Serve
Remove chicken and bell peppers from skewers and rough chop in half for easier to bite pieces.
Serve with light drizzle of Mango Sauce
