Sophia’s Oatmeal Lace Cookies

Ingredients

  • ½ cup butter
  • ½ cup coconut sugar
  • 1/4 teaspoon vanilla powder
  • 2 Tablespoons unsweetened applesauce
  • 1 cup old fashioned oats
  • ¼ cup gluten free flour (half Otto’s cassava flour, half oat flour)
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 325 degrees. Line two cookie sheets with parchment paper. 
  2. Place the butter, sugar, and vanilla in a mixing bowl. Mix on medium speed until fluffy.
  3. Add the unsweetened applesauce and mix until combined. 
  4. Add the oats, gluten free flour blend, and salt and mix on low speed until combined. The batter may seem a little wet – that’s okay – it’s not a very firm batter. 
  5. Drop the dough by teaspoonfuls on the prepared baking sheets, leaving about 2 ½ inches between them. These cookies will spread, so don’t crowd them.
  6. Bake at 325 degrees for about 10 minutes, or until the edges turn golden brown. Keep an eye on these while baking – they can turn from golden brown to burnt very quickly. 
  7. Allow the cookies to cool for a few minutes, then use your fingers to peel the cookies off the parchment. Repeat steps 5 and 6 with remaining batter.
