Sophia Thai Soup


2.5 inch piece of ginger root

5 cloves garlic

3 cups Chicken broth

1 can Coconut milk

3 carrots Carrots rough chunks 

2 Cubed potatoes

1 Bell pepper sliced thin and cut in half

Juice of one medium lime

Bring to a boil and cook until carrots and potatoes are fork tender

Add chicken, quinoa, cilantro, and fresh lime squeeze
