Principles
The primary thing with any of these is freshness. Smoking, curing, fermenting, canning, preserving, pickling, and aging are all methods that do not settle well. Items with preservatives, dyes, and artificial flavors do not work well.

- Beef – fresh, not dry aged.
- Chicken – Boneless, skinless

- Butter (no enzymes – cream and salt, especially like grassfed/irish butter)

- Cassava Flour (Only Otto’s Natural brand)
Other
- Salt – Kosher, pink Himalayan, and Sea salt
- Black pepper – small amounts, freshly cracked
- Olive Oil Potato Chips (especially Trader Joe’s brand)
- Coconut Milk (we like to use Trader Joe’s canned coconut milk – only ingredient is coconut water and finely processed coconut meat)
