Andy’s Mexican Breakfast Casserole

Ingredients

  • 1lb ground chorizo, breakfast sausage, or other ground meat
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 12 eggs
  • 2 cups shredded cheese
  • 1 1/2 cup salsa
  • 1/2 tsp kosher salt
  • 15 cranks black pepper

Instructions

Preheat oven to 350 degrees. Butter a 9×13 baking dish.
Cook breakfast sausage over medium high heat until done or close to done.
Beat eggs with salt and pepper. Add in salsa and shredded cheese.
Put cooked sausage in 9×13 dish. Spread evenly. Sprinkle diced onion and bell pepper evenly over sausage. Pour egg mixture over top and evenly spread.

Bake uncovered for 40-50 minutes until eggs are set. Let stand 10 minutes before serving.
